Equipment
- 9x5 inch loaf pan
- Large Bowl
- Electric mixer (optional)
- Fork
- Whisk
- Wire rack
Ingredients
Ingredients
- 2 ripe bananas, mashed overripe is best
- 1/3 cup unsalted butter, softened (67g)
- 3/4 cup granulated sugar (150g)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour (192g)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Optional Add-Ins
- 1/2 cup chopped walnuts, pecans, or chocolate chips optional
- 1/2 teaspoon cinnamon, nutmeg, or cardamom optional
- 1 tablespoon chia seeds or flax seeds optional
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan. This prevents the bread from sticking.
- Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This usually takes about 3-5 minutes with an electric mixer.
- Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined. Make sure everything is mixed well.
- Mash the Bananas: In a separate bowl, mash the ripe bananas with a fork until smooth. Some small lumps are fine.
- Combine Wet and Dry: Add the mashed bananas to the butter mixture. Mix until just combined.
- Mix Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. This ensures even distribution.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients. Mix until just combined. Be careful not to overmix.
- Pour into Pan: Pour the batter into the prepared loaf pan. Spread evenly.
- Bake: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- If you don’t have unsalted butter, you can use salted butter. However, reduce the amount of salt you add later.
- You can substitute all-purpose flour with whole wheat flour for a slightly denser, nuttier bread.
- If you're out of vanilla extract, a dash of almond extract can also work.
