Ingredients:
- 12 vanilla ice cream sandwiches
- 1 tbsp melted unsalted butter
- 2 cups heavy whipping cream, cold
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups Butterfinger candy bars, roughly chopped
- 1/2 cup Butterfinger candy bars, finely crushed
- 1/4 cup chocolate syrup
- 1 cup whipped topping
Instructions:
- Lightly grease an 8x8 inch baking pan with melted butter and line it with parchment paper, leaving an overhang on two sides for easy lifting.
- Arrange 6 ice cream sandwiches in the bottom of the pan, trimming edges if necessary to fit snugly, and press down lightly to remove air gaps.
- In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract on high until stiff peaks form.
- Gently fold the 2 cups of roughly chopped Butterfinger candy bars into the whipped cream mixture.
- Spread half of the Butterfinger cream mixture evenly over the first layer of ice cream sandwiches.
- Place the remaining 6 ice cream sandwiches on top of the cream layer.
- Spread the remaining cream mixture over the top, smoothing it with an offset spatula until level.
- Sprinkle the finely crushed Butterfingers over the top and garnish with chocolate syrup and piped whipped topping.
- Freeze for 6 hours to set the structure before slicing with a sharp chef's knife.
