Ingredients:

  • 1 lb (450g) smoked sausage or kielbasa, sliced into ½-inch rounds
  • 1 lb (450g) baby potatoes, quartered into 1-inch pieces
  • 2 cups (300g) bell peppers, chopped into 1-inch pieces
  • 1 cup (150g) red onion, cut into 1-inch wedges
  • 2 cups (300g) zucchini, sliced into ½-inch half-moons
  • 1 cup (150g) broccoli florets, bite-sized
  • 3 tbsp (45ml) olive oil
  • 1 tsp (5g) garlic powder
  • 1 tsp (5g) dried oregano
  • ½ tsp (3g) salt
  • ½ tsp (3g) black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C). Line your large baking sheet with parchment paper or aluminum foil for a seamless cleanup.
  2. In your large mixing bowl, combine the sliced sausage, potatoes, peppers, onion, zucchini, and broccoli.
  3. Pour over the olive oil, garlic powder, oregano, salt, and pepper. Toss thoroughly until every piece is coated in a glistening, thin layer of oil.
  4. Spread the mixture across the prepared sheet pan in a single layer. Ensure the pieces aren't touching too closely to allow hot air to circulate.
  5. Roast for 25–30 minutes. Halfway through the cooking time, use a spatula to toss the ingredients to ensure even browning.
  6. Remove from the oven when the sausage has reached a mahogany-colored sear and the potatoes are fork-tender with crisp edges.
