Ingredients:
- 1 lb (450g) smoked sausage or kielbasa, sliced into ½-inch rounds
- 1 lb (450g) baby potatoes, quartered into 1-inch pieces
- 2 cups (300g) bell peppers, chopped into 1-inch pieces
- 1 cup (150g) red onion, cut into 1-inch wedges
- 2 cups (300g) zucchini, sliced into ½-inch half-moons
- 1 cup (150g) broccoli florets, bite-sized
- 3 tbsp (45ml) olive oil
- 1 tsp (5g) garlic powder
- 1 tsp (5g) dried oregano
- ½ tsp (3g) salt
- ½ tsp (3g) black pepper
Instructions:
- Preheat your oven to 400°F (200°C). Line your large baking sheet with parchment paper or aluminum foil for a seamless cleanup.
- In your large mixing bowl, combine the sliced sausage, potatoes, peppers, onion, zucchini, and broccoli.
- Pour over the olive oil, garlic powder, oregano, salt, and pepper. Toss thoroughly until every piece is coated in a glistening, thin layer of oil.
- Spread the mixture across the prepared sheet pan in a single layer. Ensure the pieces aren't touching too closely to allow hot air to circulate.
- Roast for 25–30 minutes. Halfway through the cooking time, use a spatula to toss the ingredients to ensure even browning.
- Remove from the oven when the sausage has reached a mahogany-colored sear and the potatoes are fork-tender with crisp edges.
