Ingredients:

  • 1.5 lbs salmon fillets, skin-on
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp coarsely ground black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp unsalted butter, melted
  • 1 tbsp fresh parsley, finely chopped
  • 1 lemon, cut into wedges

Instructions:

  1. Pat the salmon fillets completely dry on all sides using paper towels to ensure a proper sear.
  2. Rub olive oil over the flesh side of the fillets and evenly sprinkle with kosher salt, coarse black pepper, and garlic powder, pressing the spices into the fish.
  3. Line a baking sheet with parchment paper and place the salmon skin-side down.
  4. Bake at 400°F (200°C) for 12-15 minutes until the internal temperature reaches 135°F (57°C) for medium-rare.
  5. Remove from oven and immediately brush melted butter over the top of each fillet.
  6. Garnish with finely chopped fresh parsley and serve with lemon wedges.
  7. Allow the fish to rest for 3 minutes before serving to let juices redistribute.
