Ingredients:
- 4 cups (600g) mixed berries (blueberries, blackberries, and raspberries)
- 1/2 cup (100g) granulated sugar
- 1 tbsp (8g) cornstarch
- 1 tbsp (6g) lemon zest
- 2 tbsp (30ml) fresh lemon juice
- 1/2 tsp (1g) salt
- 1 tsp (5ml) vanilla extract
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (120ml) whole milk
- 4 tbsp (56g) unsalted butter, melted and slightly cooled
Instructions:
- Preheat your oven to 350°F (175°C).
- In a 10-inch cast iron skillet or 9x9 inch baking dish, combine the mixed berries, sugar, cornstarch, lemon zest, lemon juice, vanilla, and salt. Stir gently with a spatula until the berries are coated in a glossy syrup.
- In a separate mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Pour in the milk and melted butter. Stir with a spoon just until the flour streaks disappear, ensuring the batter remains thick and pillowy.
- Drop the batter in spoonfuls over the berry mixture, leaving some gaps of fruit visible to allow steam to escape.
- Bake for 40–45 minutes until the topping is deep golden-brown and the berry juices are bubbling up around the edges.
