Ingredients:

  • 4 cups (600g) mixed berries (blueberries, blackberries, and raspberries)
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (8g) cornstarch
  • 1 tbsp (6g) lemon zest
  • 2 tbsp (30ml) fresh lemon juice
  • 1/2 tsp (1g) salt
  • 1 tsp (5ml) vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 2 tsp (10g) baking powder
  • 1/2 tsp (3g) salt
  • 1/2 cup (120ml) whole milk
  • 4 tbsp (56g) unsalted butter, melted and slightly cooled

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a 10-inch cast iron skillet or 9x9 inch baking dish, combine the mixed berries, sugar, cornstarch, lemon zest, lemon juice, vanilla, and salt. Stir gently with a spatula until the berries are coated in a glossy syrup.
  3. In a separate mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Pour in the milk and melted butter. Stir with a spoon just until the flour streaks disappear, ensuring the batter remains thick and pillowy.
  5. Drop the batter in spoonfuls over the berry mixture, leaving some gaps of fruit visible to allow steam to escape.
  6. Bake for 40–45 minutes until the topping is deep golden-brown and the berry juices are bubbling up around the edges.
