Ingredients:

  • 4 cups (600g) frozen mixed berries or peaches
  • 1/2 cup (100g) granulated sugar
  • 2 tbsp (16g) cornstarch
  • 1 tbsp (15ml) lemon juice
  • 1/4 tsp (1.5g) salt
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 tsp (5g) baking powder
  • 1/2 tsp (3g) salt
  • 1/2 cup (113g) unsalted butter, melted
  • 1/2 cup (120ml) whole milk
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the frozen fruit, 1/2 cup sugar, cornstarch, lemon juice, and 1/4 tsp salt. Toss gently until the fruit is evenly coated, then pour into a 9x9 inch baking dish.
  3. In a medium bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and 1/2 tsp salt.
  4. Pour in the melted butter, milk, and vanilla extract. Stir with a spatula until just combined; do not overmix.
  5. Spoon the batter over the frozen fruit in dollops or spread evenly.
  6. Bake for 40–45 minutes until the fruit juices are bubbling vigorously around the edges and the topping is a deep mahogany-gold.
