Ingredients:
- 4 cups (600g) frozen mixed berries or peaches
- 1/2 cup (100g) granulated sugar
- 2 tbsp (16g) cornstarch
- 1 tbsp (15ml) lemon juice
- 1/4 tsp (1.5g) salt
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (113g) unsalted butter, melted
- 1/2 cup (120ml) whole milk
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the frozen fruit, 1/2 cup sugar, cornstarch, lemon juice, and 1/4 tsp salt. Toss gently until the fruit is evenly coated, then pour into a 9x9 inch baking dish.
- In a medium bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and 1/2 tsp salt.
- Pour in the melted butter, milk, and vanilla extract. Stir with a spatula until just combined; do not overmix.
- Spoon the batter over the frozen fruit in dollops or spread evenly.
- Bake for 40–45 minutes until the fruit juices are bubbling vigorously around the edges and the topping is a deep mahogany-gold.
