Ingredients:

  • 4 cups (600g) frozen mixed berries (blueberries, blackberries, raspberries)
  • 2 tbsp (16g) cornstarch
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (2g) ground cinnamon
  • 1 box (432g) French vanilla cake mix
  • 1/2 cup (113g) unsalted butter, melted
  • 1/3 cup (80ml) whole milk
  • 1 tsp (5g) vanilla extract

Instructions:

  1. In a large bowl, combine the frozen berries, cornstarch, sugar, lemon juice, and cinnamon. Toss gently with a spatula until every berry is coated in the starch mixture. Pour the mixture into a 9x9 inch baking dish, spreading it evenly.
  2. In a separate bowl, whisk together the cake mix, melted butter, milk, and vanilla extract until a thick, cohesive batter forms.
  3. Drop spoonfuls of the batter over the berries, leaving small gaps to allow the berry juices to bubble up and caramelize.
  4. Bake in the oven until the topping is mahogany-colored and the berry juices are bubbling vigorously around the sides. Remove when the center of the crust is set.
