Ingredients:
- 4 cups (600g) frozen mixed berries (blueberries, blackberries, raspberries)
- 2 tbsp (16g) cornstarch
- 1/2 cup (100g) granulated sugar
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) ground cinnamon
- 1 box (432g) French vanilla cake mix
- 1/2 cup (113g) unsalted butter, melted
- 1/3 cup (80ml) whole milk
- 1 tsp (5g) vanilla extract
Instructions:
- In a large bowl, combine the frozen berries, cornstarch, sugar, lemon juice, and cinnamon. Toss gently with a spatula until every berry is coated in the starch mixture. Pour the mixture into a 9x9 inch baking dish, spreading it evenly.
- In a separate bowl, whisk together the cake mix, melted butter, milk, and vanilla extract until a thick, cohesive batter forms.
- Drop spoonfuls of the batter over the berries, leaving small gaps to allow the berry juices to bubble up and caramelize.
- Bake in the oven until the topping is mahogany-colored and the berry juices are bubbling vigorously around the sides. Remove when the center of the crust is set.
