Ingredients:
- 1.5 cups (190g) All-purpose flour
- 3.5 teaspoons Baking powder
- 1 tablespoon Granulated sugar
- 1 teaspoon Fine sea salt
- 1.25 cups (300ml) Whole milk
- 1 Large egg, room temperature
- 3 tablespoons (42g) Unsalted butter, melted and cooled
- 1 teaspoon Pure vanilla extract
Instructions:
- Whisk the flour, baking powder, sugar, and salt in a large bowl.
- Melt the 42g of butter and let it sit for 2 minutes to cool.
- Create a deep well in the center of your dry mixture.
- Pour the 300ml milk, egg, vanilla, and cooled butter into that well.
- Whisk gently from the center, slowly drawing in the flour until the large streaks of flour just disappear. Small lumps are fine.
- Preheat your skillet over medium low heat for 3 full minutes.
- Lightly grease the pan with a small pat of butter.
- Pour 1/4 cup of batter into the pan.
- Cook 2 to 3 minutes until bubbles form on top and the edges look matte.
- Flip gently and cook the other side 1 to 2 minutes until golden brown.
