Ingredients:

  • 1.5 cups (190g) All-purpose flour
  • 3.5 teaspoons Baking powder
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Fine sea salt
  • 1.25 cups (300ml) Whole milk
  • 1 Large egg, room temperature
  • 3 tablespoons (42g) Unsalted butter, melted and cooled
  • 1 teaspoon Pure vanilla extract

Instructions:

  1. Whisk the flour, baking powder, sugar, and salt in a large bowl.
  2. Melt the 42g of butter and let it sit for 2 minutes to cool.
  3. Create a deep well in the center of your dry mixture.
  4. Pour the 300ml milk, egg, vanilla, and cooled butter into that well.
  5. Whisk gently from the center, slowly drawing in the flour until the large streaks of flour just disappear. Small lumps are fine.
  6. Preheat your skillet over medium low heat for 3 full minutes.
  7. Lightly grease the pan with a small pat of butter.
  8. Pour 1/4 cup of batter into the pan.
  9. Cook 2 to 3 minutes until bubbles form on top and the edges look matte.
  10. Flip gently and cook the other side 1 to 2 minutes until golden brown.
