Ingredients:

  • 1 lb Cod, Halibut, or Salmon fillets
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 cup Panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1 large egg, beaten
  • 1 tbsp lemon juice

Instructions:

  1. Use paper towels to press firmly on all sides of the fillets until no surface moisture remains.
  2. Sprinkle sea salt and black pepper evenly over the fish fillets.
  3. Dip each fillet into the mixture of beaten egg and lemon juice, letting the excess drip off.
  4. Press the fillets firmly into the seasoned Panko breadcrumb mixture, using palms to ensure a secure, interlocking layer.
  5. Preheat the air fryer to 400°F (200°C).
  6. Lightly grease the air fryer basket and place fillets in a single layer with a 1-inch gap between them.
  7. Air fry for 7–8 minutes.
  8. Carefully flip the fillets and immediately spray the top with a light mist of oil.
  9. Air fry for another 5–7 minutes until the crust is mahogany-colored and the internal temperature reaches 145°F (63°C).
