Ingredients:
- 1 lb Cod, Halibut, or Salmon fillets
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 cup Panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1 large egg, beaten
- 1 tbsp lemon juice
Instructions:
- Use paper towels to press firmly on all sides of the fillets until no surface moisture remains.
- Sprinkle sea salt and black pepper evenly over the fish fillets.
- Dip each fillet into the mixture of beaten egg and lemon juice, letting the excess drip off.
- Press the fillets firmly into the seasoned Panko breadcrumb mixture, using palms to ensure a secure, interlocking layer.
- Preheat the air fryer to 400°F (200°C).
- Lightly grease the air fryer basket and place fillets in a single layer with a 1-inch gap between them.
- Air fry for 7–8 minutes.
- Carefully flip the fillets and immediately spray the top with a light mist of oil.
- Air fry for another 5–7 minutes until the crust is mahogany-colored and the internal temperature reaches 145°F (63°C).
