Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/3 cup (30g) unsweetened cocoa powder
- 1/2 cup (65g) all-purpose flour
- 1/4 tsp (1.5g) salt
- 4 oz (115g) dark chocolate bars, chopped into chunks
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 1 1/3 cups (170g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1 cup (170g) dark chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper, leaving an overhang.
- Whisk melted butter and sugar until combined, then beat in the eggs and vanilla until the batter is smooth and glossy.
- Sift in the cocoa powder, flour, and salt; stir just until the white streaks disappear.
- Fold in the chopped dark chocolate chunks and spread the batter evenly into the bottom of the prepared pan.
- In a separate bowl, cream together the softened butter, brown sugar, and white sugar until pale and fluffy.
- Beat in the egg and vanilla.
- Gradually add the flour, baking soda, and salt, mixing on low speed until a soft dough forms.
- Fold in the dark chocolate chips.
- Scoop the cookie dough in dollops over the brownie layer and gently press it down to cover the surface.
- Bake for 40–45 minutes until the edges have slightly pulled away from the pan and the top is deep golden brown.
- Cool completely in the pan for at least 1 hour before lifting the bars out via the parchment paper.
