Ingredients:

  • 2 lbs boneless pork chops, center-cut
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 2 tbsp vegetable oil
  • 1/2 cup light brown sugar, packed
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp melted unsalted butter
  • 2 cloves garlic, minced

Instructions:

  1. Pat the pork chops completely dry with paper towels. Note: This is the most important step for a good crust.
  2. Combine salt, pepper, smoked paprika, and garlic powder in a small bowl. Rub this mixture evenly over both sides of the meat.
  3. Heat vegetable oil in your oven safe skillet over medium high heat. Wait until the oil is shimmering.
  4. Sear chops for 3-4 minutes per side until a golden brown crust forms.
  5. While the meat sears, whisk together brown sugar, soy sauce, apple cider vinegar, melted butter, and minced garlic in a bowl.
  6. Brush a generous layer of the glaze onto each chop while they are still in the pan.
  7. Transfer the skillet to a preheated oven at 400°F (200°C).
  8. Bake for 5-8 minutes until the internal temperature reaches 145°F (63°C).
  9. Remove from the oven and move chops to a plate. Pour any remaining pan juices over the top.
  10. Let the meat rest for 5 minutes. Note: This allows the juices to redistribute so they don't run out on the plate.
