Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1/3 cup (30g) Dutch-process cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (85g) semi-sweet chocolate chips
  • 3/4 cup (170g) unsalted butter, browned and cooled slightly
  • 3/4 cup (150g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Whisk melted butter and sugar until combined. Beat in eggs and vanilla until the mixture looks glossy and smooth.
  2. Sift in cocoa powder, flour, and salt. Fold gently with a spatula until just combined to ensure a fudgy texture.
  3. Stir in semi-sweet chocolate chips to the brownie batter and set aside.
  4. Melt butter in a saucepan over medium heat, stirring constantly until the butter foams and brown bits form at the bottom; remove from heat immediately.
  5. Beat the browned butter with brown and granulated sugars until fluffy. Add the egg and vanilla, beating until pale.
  6. Stir in flour, baking soda, and salt until just combined. Fold in the chocolate chips.
  7. Drop 1 tablespoon of brownie batter onto a lined baking sheet, then top with a portion of the brown butter cookie dough.
  8. Bake for approximately 10 minutes or until the cookie top is golden brown.
