Ingredients:
- 4 cups (600g) fresh blackberries
- 1/2 cup (100g) granulated sugar
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) lemon zest
- 1/4 tsp (1.5g) fine sea salt
- 3 tbsp (25g) cornstarch
- 2 tbsp (30ml) cold water
Instructions:
- Combine the blackberries, sugar, lemon juice, lemon zest, and salt in a medium heavy-bottomed saucepan, stirring gently to coat the berries.
- Place the pan over medium heat and bring the mixture to a gentle simmer, stirring occasionally for 8–10 minutes until the liquid becomes syrupy.
- In a small bowl, whisk together the cornstarch and cold water until a smooth slurry forms.
- Slowly drizzle the slurry into the simmering berries while whisking constantly, cooking for another 2 minutes until the filling becomes clear and glossy.
- Remove from heat and transfer the filling to a glass bowl. Let it cool to room temperature before refrigerating to reach final stability.
