Ingredients:

  • 4 cups (600g) fresh blackberries
  • 1/2 cup (100g) granulated sugar
  • 2 tbsp (16g) cornstarch
  • 1 tbsp (15ml) fresh lemon juice
  • 1/4 tsp (1.5g) salt
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (0.5g) ground cinnamon

Instructions:

  1. In a large mixing bowl, whisk together the granulated sugar, cornstarch, salt, and cinnamon until no clumps remain.
  2. Add the fresh blackberries to the bowl and drizzle the lemon juice and vanilla extract directly over the fruit.
  3. Using a silicone spatula, gently fold the berries into the dry mixture until every berry is coated in a thin, glossy syrup.
  4. Allow the filling to sit at room temperature for 5 to 10 minutes to allow the sugar to draw out the natural juices and activate the cornstarch.
