Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1/3 cup (30g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (190g) Lotus Biscoff spread (smooth)
  • 1/4 cup (50g) brown sugar, packed
  • 1 large egg
  • 1 cup (125g) all-purpose flour
  • 1/2 tsp (2g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1/4 cup (15g) crushed Biscoff cookies
  • 3 tbsp (45g) Lotus Biscoff spread, melted
  • 5 whole Biscoff cookies, slightly crushed

Instructions:

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch square baking pan with parchment paper, leaving an overhang on the sides.
  2. Whisk the melted butter and granulated sugar until combined. Stir in the eggs and vanilla until the mixture looks glossy.
  3. Sift in the cocoa powder, flour, and salt. Gently fold the ingredients together using a spatula until just combined; do not overmix.
  4. Spread the brownie batter evenly into the bottom of the prepared pan.
  5. Cream together the softened butter, Biscoff spread, and brown sugar until light and fluffy.
  6. Beat in the egg until smooth, then stir in the flour, baking soda, and salt.
  7. Fold in the crushed Biscoff cookies until evenly distributed.
  8. Scoop small dollops of the cookie dough and place them atop the brownie layer.
  9. Drizzle the melted Biscoff spread over the top and use a knife or toothpick to create a swirl pattern. Top with crushed Biscoff cookies.
  10. Bake for 30 minutes or until the edges are set. Allow the bars to cool completely and chill in the refrigerator for 1 hour before slicing for clean cuts.
