Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/3 cup (30g) unsweetened cocoa powder
- 1/2 cup (65g) all-purpose flour
- 1/4 tsp (1.5g) salt
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (190g) Lotus Biscoff spread (smooth)
- 1/4 cup (50g) brown sugar, packed
- 1 large egg
- 1 cup (125g) all-purpose flour
- 1/2 tsp (2g) baking soda
- 1/4 tsp (1.5g) salt
- 1/4 cup (15g) crushed Biscoff cookies
- 3 tbsp (45g) Lotus Biscoff spread, melted
- 5 whole Biscoff cookies, slightly crushed
Instructions:
- Preheat your oven to 350°F (175°C) and line an 8x8 inch square baking pan with parchment paper, leaving an overhang on the sides.
- Whisk the melted butter and granulated sugar until combined. Stir in the eggs and vanilla until the mixture looks glossy.
- Sift in the cocoa powder, flour, and salt. Gently fold the ingredients together using a spatula until just combined; do not overmix.
- Spread the brownie batter evenly into the bottom of the prepared pan.
- Cream together the softened butter, Biscoff spread, and brown sugar until light and fluffy.
- Beat in the egg until smooth, then stir in the flour, baking soda, and salt.
- Fold in the crushed Biscoff cookies until evenly distributed.
- Scoop small dollops of the cookie dough and place them atop the brownie layer.
- Drizzle the melted Biscoff spread over the top and use a knife or toothpick to create a swirl pattern. Top with crushed Biscoff cookies.
- Bake for 30 minutes or until the edges are set. Allow the bars to cool completely and chill in the refrigerator for 1 hour before slicing for clean cuts.
