Ingredients:

  • 4 salmon fillets (6 oz / 170g each)
  • 1 lb (450g) fresh green beans, trimmed
  • 2 tbsp (30ml) olive oil
  • 1 tsp (5g) kosher salt
  • 1/2 tsp (2.5g) cracked black pepper
  • 3 tbsp (45ml) unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5g) lemon zest
  • 1/2 tsp (2.5g) dried oregano

Instructions:

  1. Preheat your oven to 400°F (200°C). Line your baking sheet with parchment paper to prevent sticking and eliminate scrubbing.
  2. Place the trimmed green beans on the baking sheet. Drizzle with olive oil and toss with salt and pepper until evenly coated. Note: Use your hands to ensure every bean is glistening.
  3. Push the beans to the outer edges of the pan to create a clear space in the center for the fish. Note: This prevents the salmon from boiling in bean moisture.
  4. In a small bowl, whisk together the melted butter, minced garlic, lemon juice, zest, and oregano.
  5. Pat the salmon fillets dry with a paper towel. Note: This is the secret to a good sear.
  6. Place the fillets in the center of the pan. Brush the glaze generously over the top of each fillet.
  7. Slide the pan into the oven and roast for 12–15 minutes.
  8. Check for doneness: the salmon should become opaque and flake easily with a fork, and the green beans should be bright green with slight charred blisters.
  9. Remove from the oven immediately to stop the carryover cooking.
