Ingredients:
- 4 salmon fillets (6 oz / 170g each)
- 1 lb (450g) fresh green beans, trimmed
- 2 tbsp (30ml) olive oil
- 1 tsp (5g) kosher salt
- 1/2 tsp (2.5g) cracked black pepper
- 3 tbsp (45ml) unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5g) lemon zest
- 1/2 tsp (2.5g) dried oregano
Instructions:
- Preheat your oven to 400°F (200°C). Line your baking sheet with parchment paper to prevent sticking and eliminate scrubbing.
- Place the trimmed green beans on the baking sheet. Drizzle with olive oil and toss with salt and pepper until evenly coated. Note: Use your hands to ensure every bean is glistening.
- Push the beans to the outer edges of the pan to create a clear space in the center for the fish. Note: This prevents the salmon from boiling in bean moisture.
- In a small bowl, whisk together the melted butter, minced garlic, lemon juice, zest, and oregano.
- Pat the salmon fillets dry with a paper towel. Note: This is the secret to a good sear.
- Place the fillets in the center of the pan. Brush the glaze generously over the top of each fillet.
- Slide the pan into the oven and roast for 12–15 minutes.
- Check for doneness: the salmon should become opaque and flake easily with a fork, and the green beans should be bright green with slight charred blisters.
- Remove from the oven immediately to stop the carryover cooking.
