- 2 cups (250g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 2 tsp (10g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (3g) salt
- 1/2 cup (115g) unsalted butter, melted and cooled
- 1 large egg, room temperature
- 3/4 cup (180ml) whole milk
- 2 cups (300g) tart apples (Granny Smith), peeled and finely diced
- 1 tsp (5ml) vanilla extract
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) whole milk
- 1/2 tsp (2.5ml) vanilla extract
- Pinch of salt
Instructions:
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Peel and dice the Granny Smith apples into uniform 1/4 inch cubes.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt.
- In a separate bowl, beat the egg and stir in the melted butter, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Fold gently with a spatula just until the flour disappears, maintaining a lumpy, thick consistency.
- Gently fold the diced apples into the batter until evenly distributed.
- Drop approximately 3 tablespoons of batter per fritter onto the prepared baking sheet. Slightly flatten with the back of a spoon while keeping the edges irregular.
- Bake for 20 minutes or until the fritters are golden brown and set.
- Prepare the glaze by whisking together powdered sugar, milk, vanilla extract, and a pinch of salt in a small bowl.
- Drizzle the vanilla glaze over the warm fritters before serving.
