Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 2 tsp (10g) baking powder
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (3g) salt
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 1 large egg, room temperature
  • 3/4 cup (180ml) whole milk
  • 2 cups (300g) tart apples (Granny Smith), peeled and finely diced
  • 1 tsp (5ml) vanilla extract
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) whole milk
  • 1/2 tsp (2.5ml) vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Peel and dice the Granny Smith apples into uniform 1/4 inch cubes.
  3. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt.
  4. In a separate bowl, beat the egg and stir in the melted butter, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients. Fold gently with a spatula just until the flour disappears, maintaining a lumpy, thick consistency.
  6. Gently fold the diced apples into the batter until evenly distributed.
  7. Drop approximately 3 tablespoons of batter per fritter onto the prepared baking sheet. Slightly flatten with the back of a spoon while keeping the edges irregular.
  8. Bake for 20 minutes or until the fritters are golden brown and set.
  9. Prepare the glaze by whisking together powdered sugar, milk, vanilla extract, and a pinch of salt in a small bowl.
  10. Drizzle the vanilla glaze over the warm fritters before serving.
